Harvest. Leaves cut at 60–80 days after transplant, transported to the facility within 6 hours.
Wash. Bubble washer + spray rinse to remove soil and field residues.
Blanch. Hot water at 90–95 °C for 60–90 seconds. This step inactivates polyphenol oxidase (PPO) and peroxidase; it is not for cleaning.
Cool & dewater. Cold-water cooling, then belt press to 55–60% moisture.
Dry. Spray dryer, inlet 160–180 °C, outlet 80–90 °C, or hot-air belt dryer at 120–150 °C as alternative.
Mill & sieve. Pin mill, then 80/100 mesh screen. Oversize returns to the mill.
Metal detect & pack. Ferrous, non-ferrous, and stainless-steel detectors before packaging.

Kale powder mixes 1:5 to 1:10 (w/w) with apple, pineapple, or lemon juice powder to round out grassy notes. In protein bars it typically sits at 3–8% of the formula; above 10%, the green flavor dominates.
